How Did High Spirits Come About?

How Did High Spirits Come About?

High Spirits was the brainchild of Rick Morris, owner and operator of Brewhaus America Inc. , which is a distributor and retailer of home brewing and distillation supplies. The concept for High Spirits came about from a variety of factors, ranging from the rising cost of imported turbo yeast, supply issues, and, most importantly, quality. You know the saying, "If you want something done right, you have to do it yourself"? Well, Rick decided to invest the time and effort required to develop an exceptional and affordable turbo yeast himself.

1. Early Testing

All of the turbo yeast styles that Rick had tested were still based on the original technology from the early 1990s, including the use of urea as a nitrogen source. This meant starting from scratch on his turbo yeast development, and while it was a huge undertaking, it also gave him the ability to address issues such as the use of urea, the overall purity of fermentation, and optimization of each yeast style.

2. Yeast Strains

Unlike brands that use the same yeast strain and basic recipe for every style, Rick sourced the highest quality, most appropriate strains for each unique yeast style. Neutral fermenting styles use yeast strains that produce the minimum number of congeners for a clean fermentation, while fruit, rum, and whisky styles each use strains specific to what is being fermented, enhancing flavor and aroma contribution.

4. Urea Free

Urea was the final stepping stone. While urea is used in most turbo yeast brands for its nitrogen contribution, it is unhealthy--even banned in several countries for use in beverage fermentations due to its contribution to the production of ethyl carbamate, a known carcinogen. To maintain high-quality, exceptionally clean fermentations, all High Spirits Turbo Yeast and specialty yeast styles are urea free!

3. Proper Nutrients

Yeast requires no fewer than 33 individual vitamins, minerals, and nutrients in order to efficiently perform its duties. Each of these components must be correctly balanced in order to reduce stress on the yeast, which can increase production of byproducts. This results in the cleanest neutral fermentations, while obtaining maximum flavor and aroma in your whiskies, rums, and fruit fermentations.

5. The Result

After several years of research and development, High Spirits Turbo Yeasts were officially launched in 2011. Manufactured by Brewhaus America near Fort Worth, Texas, High Spirits Turbo Yeasts are more affordable than most yeasts that are imported from other countries. We produce our yeast here in the USA.

We don't just import yeast and slap our label on it. Our yeasts were developed from scratch by Brewhaus right here in Texas, with quality as the top consideration.

All High Spirits yeasts are
urea free.

Urea contributes to the production of ethyl carbamate, a known carcinogen, in fermentation and is even banned in beverage alcohol production in some countries.
